I’ve made stuffed tomatoes for years and this dish is one of our summer eating pleasures. They melt in your mouth with an explosion of summer tomato flavor.
Simple Stuffed Tomatoes
9 Roma Tomatoes
1 cup Italian bread crumbs
2 cloves garlic, chopped
1 tsp. salt
Pepper to taste
2 T chopped basil (or more)
2 T chopped parsley (or more)
1. Slice tomatoes in half. Use a spoon to scoop out the pulp. Discard the core.
2. Put the pulp into a mixing bowl.
3. Place the tomatoes cut side down on a towel to drain.
4. Mix breadcrumbs, chopped garlic, salt, pepper, basil, and parsley into the tomato pulp. Spoon into tomato shells.
5. Bake at 450 degrees for 10 minutes.
6. Let cool for a bit and enjoy.
These make a wonderful summer side dish. We like them so much that we’ve been known to have them as a main dish with veggie sides from the garden as a simple summer meal.
To quote Martha, “Summer tomatoes are a good thing.” Do you agree?

Well, now I know what to do with the mixing bowl of tomatoes I picked from the garden. I don't have enough to do pasta sauce, but stuffed tomatoes, yes!
ReplyDeleteMmmmm, these look wonderful, Paula! Tomatoes fresh from the garden are on my short list of favorite foods. I absolutely adore them. And basil? I love it, too! I've had tomatoes stuffed with a meat mixture, but these look wonderful AND healthful. Thank you for sharing this recipe!
ReplyDeleteOh Boy! Yummy! My mouth is watering for those tomatoes. I lovelovelove homegrown tomatoes, and that recipe sounds like a perfect way to use them! I think I may have to hit the farmer's market and see what they have, tomato-wise...
ReplyDeleteOh my, that looks so good! Our garden has only yielded a handful of tomatoes this year...not sure what the problem is.
ReplyDeleteThose look yummy! Wish I had some right now. Carla
ReplyDeleteConsider me jealous! We only had enough tomatoes for about 8 jars of salsa. I hate our tomato plants didn't put out more. Thanks for the recipe. It looks soooo yummmmmy! Bookmarking that for sure!
ReplyDeleteOh this looks so good! Really wishing I had planted a garden this year!! Hopefully I can pick up some tomatoes from a local farm stand this weekend!!
ReplyDeleteThey are a good thing! And a delicious one at that! Thanks for sharing the recipe.
ReplyDeleteThat looks delicious. I was never a big tomato person until I grew my own. There is no comparison to home grown tomatoes. What a yield!
ReplyDeleteWow! What a delicious idea, so yummy and tasty looking. Now, to get my meat and potatoes man to eat it. He loves growing tomatoes even though the deer got to them this year, but we'll figure out a way. :)
ReplyDeleteLooks yummy Paula and yes tomatoes are a good thing.
ReplyDeletePaula, you have been busy posting while I was on break! I think your lighting idea is brilliant! Also, this tomato post is great because we are fortunate that nice folks share their tomatoes with us, so it's nice to have a new recipe to try. This one looks fantastic, and I am bookmarking it. Thanks for posting this recipe for stuffed tomatoes!
