My tennis team had a fun practice/social Saturday night. Any event is more fun with food, so I prepared Cucumber Dip from Southern Living to share with my friends. This recipe is now on my “must-make-again” list!
Ingredients
- 5 small cucumbers, unpeeled (I used 2 large cucumbers.)
- 1/2 cup rice vinegar
- 1 teaspoon kosher salt
- 1 teaspoon garlic salt, divided
- 2 (8-oz.) packages cream cheese, softened (I used low-fat.)
- 1/2 cup mayonnaise (I used fat-free Miracle Whip.)
- 2 teaspoons chopped fresh chives (I omitted.)
- Garnish: fresh chives
- Pita chips (I served with fresh veggies.)
Preparation
1. Grate cucumbers into a medium bowl. Toss with rice vinegar, salt, and 1/2 tsp. garlic salt. Cover and chill 8 hours.You can see that after 8 hours, the cucumbers release quite a bit of water.
Drain cucumber mixture well, pressing between paper towels. (I use a clean kitchen towel instead of paper towels.)
2. Beat cream cheese, mayonnaise, and remaining 1/2 tsp. garlic salt at medium speed with an electric mixer 1 to 2 minutes or until smooth.
Stir in cucumber mixture and chives.
Cover and chill at least 1 hour.
This stuff is SO good. In fact, I would call it one of the best dips that I’ve had.
I am positive that this will be a recipe that I make time and time again.

YUM! That is similar to a spread I used to make for cucumber sandwiches for showers and weddings, etc. VERY GOOD! MMM! My recipe doesn't have vinegar though. I never would have thought of using it as a dip.
