Make Pesto Now to Use this Winter

Basil is at its peak now and it is the perfect time to make Pesto. I make batches during the summer to enjoy all winter.

Make your pesto as usual and then spoon it into an ice tray that has been sprayed with cooking spray. I use olive oil spray since pesto contains olive oil. Cover with plastic and freeze. I find that one batch of pesto will exactly fill one ice cube tray.

Here are the frozen cubes:

Use a knife (a table knife is fine) to loosen each cube. Pop them out of the tray and place in a resealable freezer bag.

The main thing that I use my frozen pesto cubes for is pizza. I thaw two cubes, brush the pesto over the crust, add my toppings, and bake. We like this so much that we never use tomato sauce on our pizza at home. I also use my cubes for pasta or I will melt a cube and toss it with vegetables.
