Do you like coconut shrimp? I do! This recipe is easy and it's not fried so it's healthier than a restaurant version. I made this with fresh NC shrimp the other night for a beach meal and I'll definitely make it again.
Coconut Shrimp
1 cup coconut
1 pkt Shake 'N Bake Extra Crispy Coating Mix
1 tsp Old Bay Seafood Seasoning
1 egg, lightly beaten
1 lb extra large shrimp
Preheat oven to 400 degrees. Combine coconut, Shake 'N Bake, and Old Bay in a shallow bowl.
Peel and clean shrimp.
mixture until evenly coated on all sides.
(I used 1 1/2 lbs of shrimp and left a few plain for Reese.)
Yum!! This recipe is a keeper!
