Parmesan Okra

I had no idea that Okra is so delicious. My mother doesn’t like it and therefore I did not eat it growing up. My running buddy gave me a bag of fresh pods from his garden last Sunday and I cooked it using this recipe from Southern Living. Try it, it is really good!

Do you remember this picture from July? I took this one day when I picked tomatoes, beans, and cucumbers in my friend’s garden. Now I know that I need to pick Okra, too!

Parmesan Okra

1 pound fresh okra, cut into 1/2-inch-thick slices
2 tablespoons olive oil
1/4 cup Italian-seasoned breadcrumbs
2 teaspoons Greek seasoning
1/4 cup freshly shaved Parmesan cheese

1. Sauté okra in hot oil in a large skillet over medium-high heat 5 to 6 minutes or until crisp-tender. Sprinkle with breadcrumbs and seasoning, and cook, stirring often, 3 minutes. Sprinkle with Parmesan cheese, and serve immediately.

Yield: Makes 4 servings

  1. I love okra!!! Thanks for the recipe, chick. :) I am so happy that your classes are better this year. I know that makes all the difference. My mom thinks she has a pretty good group of 2nd graders, but it's only been 1 day. ;)

  2. Paula, I LOVE okra!! We did not grow any this year and it's hard to find good okra at markets in my area. Thanks for a different recipe. We usually either steam it, (yes, I like it slimmy) or cut it up, bread it and pan fry it. This looks like a good alternative. Yum! glad you found out you like it too!

  4. Add me to the list of those who love okra. Fried. Or in soup. I missed that recipe in SL. Looks very yummy. When my kitchen is working again I'll have to give it a try.
