Cooking From My Archives

Do you ever have one of those weeks where you simply can't think of a thing to cook?  I plan my meals on Sunday and usually cook ahead for the week.  This week I didn't have much inspiration, so I browsed my recipe archives and came up with three meals that we haven't had in while.  There's only two of us, so three recipes will last until Friday when I will cook again.  (Lucky me!)
I picked a bunch of tomatoes and peppers from my garden, so first on my recipe list for the week was Country Living's Roasted Tomato Sauce.  This smells wonderful as it cooks and is great over pasta or as a pizza sauce.  We'll have it one night this week with pasta and steamed broccoli.  If you have fresh peppers and tomatoes in your garden, give this a try.  The flavor is incredible!

Next on the list for this week is Black Eye Pea Chili, an easy and terrific recipe shared with me by my friend and running partner, Suzanne.  It's so yummy and perfect for the cold nights we are supposed to have this week.   Another great thing about this recipe is that it requires only six ingredients.

I'm on a tomato kick this week and Skillet Lasagna continues the theme.  It's nice to make a cheesy lasagna that's simple and doesn't require the oven.

    Sounds great! I make a homemade tomato soup using Roma tomatoes and we roast them before making the soup, oh the smell in the kitchen is so wonderful!
